A couple of
weeks ago I visited Morrisons Head Office. I was there to find out more about the new M Savers range which has been designed to help shoppers save money without compromise.
I spent time with Richard, a Development Chef, and Sarah Willingham, a money saving expert, who explained the thinking behind the new range and demonstrated some low cost meals.
The Development Kitchen, which is floor to ceiling glass, is located in the atrium of Morrisons’ Head Office. It’s a foodie fish bowl … I can’t imagine how people work in that building without salivating every time they walk past.
Morrisons’ research has shown that the average UK household’s weekly shop is around 11 per cent of their outgoings, however, many families are forced to spend much more. The new range, of everyday products, includes products under 30p, 50p and £1. I like the M Savers packaging, usually value brands look cheap, but these are colourful and eye catching. The vegetables in the M Savers range are just different shapes and sizes, rejects from what is considered the norm. There’s nothing wrong with a ginormous carrot or a knobbly parsnip.
Richard made meatballs, which serve 4, for a mere 58p per portion and we split into couples. In a scene reminiscent of Masterchef, and with the aid of wine, we went off to our work stations to make some of the recipes that Richard had designed. Myself and Ellie made Salmon fishcakes (recipe below). I was worried I’d burn them, such is my prowess in the kitchen, but we managed to create tasty fish cakes. The pesto really gave them some oomph!

Salmon and Pesto Fish Cakes, Carrots and Peas
(Total cost £2, single portion £1)
Ingredients
1 packet of salmon trimmings
600g large potatoes
50g pesto
100g breadcrumbs
150g carrots
100g peas
Egg, flour and breadcrumbs
Cooking method
Dice the potatoes and cook in a pan of boiling water until soft. Drain well and mash until smooth, then leave to cool. Finely chop the salmon trimmings and mix into the cooled mash potato along with the pesto. Shape the mix into four fish cakes. Coat each fish cake in a little flour, dip into a beaten egg and coat int he breadcrumbs.
Fry the fish cakes in a little oil for 2 minutes on each side. Then, place on a baking tray and cook in the oven for 10 minutes at 175 degrees. Cut the carrots into pieces and cook in boiling water for five minutes. Add the frozen peas and cook for a further three minutes.
Serve the fish cakes with a the peas and carrots.
The fish cakes are suitable to freeze.
